How To - Full Recipe Costing (with choice)
In this guide we will look at a recipe that already has ingredients added, but also requires a choice to be included as part of the dish.
The purpose of this exercise is to demonstrate the setting up of a choice and adding this to a recipe.
In this example, a choice is offered to the user, on the POS terminal, to select an offering on a food option, e.g., should sticky toffee pudding have ice cream or custard.
Sticky Toffee Pudding with a choice of Ice Cream or Custard
-
Click the Set Filter button
-
Select the required sub category from the drop down and press OK; this will filter your food items and only show the required list of items that you are going to be working with, e.g. desserts
-
Click the Insert button and ensure you have a recipe line created – two lines should now be created, one of the ice cream and the other for the custard, ensuring the correct quantities are added.
-
Click the Insert button again and select choice from the product type drop down and in the retail name add an appropriate name for the choice which you will be able to identify easily
-
The following screen should now be displayed:
-
The choice now needs to include the two recipe lines previously created to be offered on the POS terminal as a choice selection. Press either the insert button on your keyboard or click the Insert Ingredient button.
-
From the Add Portion Ingredient window choose the custard and the ice cream; if a description has been added to these products it can make it easier to ensure you select the right item.
- When inserting ingredients into the choice, there is no requirement to specify the unit amount as this will already have been specified within the setup of that recipe. Instead, the unit should be selected as Standard and the quantity of 1 should be entered. By default the Unit Type is already selected.
- When complete the choice should look similar to below:
- Reselect the recipe line that the choice should be added to
- Click the portions tab and press the insert ingredient button or press the insert button on your keyboard
- In the Add Portion Ingredient window search for the choice and press OK.
-
When the Ingredient Details window is displayed as per the choice, the unit type will automatically be set to portion so only the unit of standard should be selected and a quantity of 1 - the recipe should now look as shown.
If there are multiple choices they should be inserted in order that you wish them to appear on the POS terminal. - When a choice has been used, the cost shown is based on the criteria selected in the settings screen within Product Modelling. To change how the cost is calculated, click the Settings button and choose from either minimum, maximum or average cost.
